Mini Pumpkin Muffins ~ It’s that time of the year, when everything is about beautiful fall colors šŸ, crispy air and Pumpkins! šŸŽƒšŸŽƒšŸŽƒšŸŽƒ Here’s a quick and simple recipe to make muffins in just 30 mins!

Ingredients:
– 1/2 cup Vegetable Oil
– 3 large Eggs
– 1 cup Granulated Sugar
– 1 1/2 cups Pumpkin PurĆ©e – 1 1/2 teaspoons Cinnamon powder – 1 1/2 teaspoons Salt
– 1 1/2 teaspoons Baking powder
– 1 3/4 cups + 2 tablespoons All purpose Flour – Cinnamon Sugar for coating

Instructions
1. Preheat the oven to 350Ā°F. Lightly grease muffin pan.
2. Beat together the oil, eggs, sugar, pumpkin, spices, salt, and baking powder until smooth.
3. Add the flour, stirring just until smooth.
4. Fill the wells of the muffin pans about 3/4 full; they’ll need to bake for 23 to 25 minutes.
5. Remove the muffins from the oven, and after about 5 minutes, loosen their edges, and transfer them to a rack to cool.
6. While the muffins are still warm (but no longer fragile), gently shake them in a bag with the cinnamon-sugar.
7. Cool completely, and store (not wrapped tight) at room temperature for several days.

The Mini Pumpkin Pie with Spider Web

Pumpkin pie is a traditional sweet dessert, often eaten during the fall and early winter, especially for Halloween, Thanksgiving and Christmas. I wasn’t ready to wait till Thanksgiving, so decided to make it for Halloween šŸ™‚

Halloween is a yearly celebration observed in a number of countries on 31st October. Typical contemporary festive Halloween activities include trick-or-treating, attending costume parties, decorating, carving pumpkins into jack-o’-lanterns, lighting bonfires, apple bobbing and divination games, playing pranks, visiting haunted attractions, telling scary stories and watching horror films. We signed up for hosting trick or treating this year for the very first time! So, pretty exciiitttttedddd! šŸ˜€

FUN FACT: The world’s largest pumpkin pie was made in New Bremen, Ohio, at the New Bremen Pumpkinfest.It was created on September 25, 2010. The pie consisted of 1,212 pounds of canned pumpkin, 109 gallons of evaporated milk, 2,796 eggs, 7 pounds of salt, 14.5 pounds of cinnamon, and 525 pounds of sugar.The final pie weighed 3,699 pounds and measured 20 feet in diameter. I love the fragrance that you get while the pumpkin pie is baking! Do you? If yes, then this recipe is worth trying out šŸ˜‰ I have added the classic pumpkin pie recipe as well as the variation that I made this time!

TIP: To make the Spider Web, I mixed 1/4 cup of pie mix with cocoa powder until smooth and filled it in a piping bag. Then, cut a small hole in the corner of the bag containing the chocolate filling and pipe a large spiral (4-5 rotations) over the top of the plain pumpkin filling.Take a toothpick and, starting at the center of the tart, drag it gently through the filling towards the outer crust to create the spiderweb. Gently tap the pan on the table to smooth out any grooves in the filling. Here’s a video showing this process:

The Mini Pumpkin Pie

  • Servings: 8 pieces

Ingredients

  • 3/4 cup Granulated Sugar
  • 1 teaspoon ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/2 teaspoon ground Ginger
  • 1/4 teaspoon ground Cloves
  • 2 large Eggs
  • 1 can 100% Pure Pumpkin
  • 1 can Evaporated Milk
  • 1 unbaked 9-inch deep-dish Pie shell
  • Whipped cream (optional)

Method

  1. Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin andĀ sugar-spice mixture. Gradually stir in evaporatedĀ milk.
  2. Pour into pie shell.
  3. Bake in preheated 425Ā° F oven for 15 minutes.Ā Reduce temperature to 350Ā° F; bake for 40 to 50Ā minutes or until knife inserted near center comes outĀ clean.
  4. Cool on wire rack for 2 hours. Serve immediately orĀ refrigerate. Top with whipped cream before serving.

Variation

  1. So instead of the traditional big pie, I decided to make small bite size ones this time. The steps are pretty much the same.Ā Prepare the batter as in step 1 of the previous method.Ā Pulse graham crackers and butter in a food processor.
  2. Take a mini cheesecake pan and line each mold with a 1 inch layer of theĀ graham cracker mix and ļ¬‚atten it.Ā Pour the pumpkin pie batter in each.Ā Preheat the oven to 375F and then bake for 45 minutes.

 

 

Pumpkin Spice Pancakes

 

A one bowl pancake recipe, with the perfect balance of fluffy and dense, sweet, spicy, and packed with pumpkin flavor!ā€Ŗ

Tender, spiced pumpkin pancakes that require just 1 bowl and 20 minutes to prepare. Healthy, simple and perfect for chilly fall mornings! These are absolutely phenomenal topped with a bit of butter and maple syrup. Add a bit of pumpkin pie spice on top, it takes them to a new level of delicious ā€“ highly recommended! If you want it to be a bit more sweet, sprinkle some confectioner’s sugar on top of it!

Pumpkin Spice Pancakes

  • Servings: 8

Ingredients

  • 3/4-1 cup Milk
  • 1 tablespoon Lemon juice
  • 1/3 cup packed Pumpkin puree
  • 1 tablespoon Butter or Grape seed Oil
  • 1/2 teaspoon pure Vanilla extract
  • 3 tablespoon Brown sugar
  • 1 tablespoon Honey
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • Pinch Salt
  • 1 teaspoon Pumpkin Pie Spice
  • 1/4 teaspoon Cinnamon
  • 1 cup whole Wheat ļ¬‚our

Method

  1. Preheat a large skillet on medium to medium-low heat on the stoveĀ stop. You want the surface to be hot but not screaming hot – oil shouldn’t burn when it hits the surface.
  2. Combine 3/4 cup milk and lemon juice in a large bowl and let rest for 5Ā minutes to curdle. Then add melted butter or oil, honey, pumpkin,Ā maple syrup, brown sugar, vanilla extract and whisk to combine.
  3. Next add flour, baking soda, baking powder, salt and spices to a sifterĀ and sift over the wet ingredients. If the batter appears too thin, add aĀ bit more ļ¬‚our. If too thick, add a splash of milk. If too thin, add a bitĀ more ļ¬‚our. Let batter rest for 5-10 minutes.
  4. Butter or spray your griddle with cooking spray and pour 1/4 cupĀ measurements of the batter onto the griddle. There should be 6-7Ā pancakes. Flip when bubbles appear in the middle and the edges turnĀ slightly dry.
  5. Cook for 1-3 minutes more on the other side, then plate.
